Chicken Afritada (Filipino chicken stew)
Make your own yummy Chicken Afritada, also known as Filipino chicken stew.

Ingredients:
- 1 kg skin-free chicken breast, diced
- 4-5 potatoes, peeled and halved
- 1 red onion, diced
- 2 cloves garlic, minced (add more if desired)
- 1 green pepper, sliced into strips
- 1 red pepper, cut into strips
- 2 cups chicken stock (preferably low salt variety)
- 1 can of tomato puree
- 2 tbs fish sauce (preferably low salt variety if available)
- 1 tbs Friendly oil (e.g. olive or canola oil)
Method:
- In a wok, heat oil. Saute onions and garlic until brown.
- Add chicken and slightly brown.
- Pour the tomato sauce and stock. Bring to the boil and allow to simmer for 20 mins or until the chicken is almost cooked.
- Add potatoes and continue to cook for 10 mins or until the potatoes are cooked.
- Add the green and red peppers, simmer for an additional minute or two.
- Serve the chicken recipe hot with steamed rice (preferably brown).
