Tuna/ salmon and potato patties

Yummy tuna/salmon and potato patties.

Ingredients: 

  • 500g (2-3 medium) potatoes (or sweet potato) 
  • ½ cup reduced fat milk 
  • 425g can tinned tuna or salmon in spring water 
  • 1 spring onion 
  • ½ cup wholemeal breadcrumbs 
  • 1 egg 
  • 2 tbsp of chopped coriander or parsley 
  • 1 tsp olive oil 

Method: 

  1. Peel potatoes, chop into small chunks and boil until soft. When cooled, add milk and mash. 
  2. Drain tuna or salmon and mix with potatoes, chopped spring onion, herbs, egg and breadcrumbs. 
  3. Mix well until all ingredients combined, then shape mixture into approximately 30 patties. 
  4. Heat oil in pan and cook each pattie until golden on both sides. 
  5. Drain off excess oil on paper towel. 

Tips:

  • This recipe makes 30 patties, you freeze the leftovers for a quick meal for another time.  
  • Serve with a colourful salad and low-fat dressing. 
  • Canned fish, such as tuna or salmon, can be a great source of protein, as well as the essential healthy fats Omega 3 fatty acids.
