Eggs ‘n’ beans

Quick and nutritious eggs and beans on toast with mashed avocado.

Ingredients: 

  • ½ cup canned baked beans, salt reduced 
  • 1 egg 
  • ¼ avocado, mashed 
  • ½ cup mixed veggies of your choice (e.g. tomato, mushrooms, spinach, capsicum) 
  • 1 slice wholemeal bread 
  • Extra virgin olive oil spray 

Method: 

  1. Spray a fry pan lightly with olive oil spray and heat on medium heat. 

  2. Crack egg to one side of the pan. Cook until yolk is firm or at desired texture. 

  3. Lightly grill vegetables of your choice on the other side of the fry pan. 

  4. Meanwhile toast or grill wholemeal bread. Once toasted, spread the avocado onto the bread. 

  5. Heat baked beans in a small pan on low heat or microwave for 1min and 30sec. Then add the baked beans to your toast. 

  6.  Once cooked add grilled egg and vegetables. Enjoy!
