Vegetabe fritters with dips
Delicious vegetable fritters with fresh yogurt dips.

Ingredients:
Fritters
- ¼ cup plain wholemeal flour
- 1 red onion, peeled and finely sliced
- 1 tbsp olive oil
- 3 tbsp parsley and coriander, chopped
- 2 medium-sized eggs
- 2 large tomatoes, chopped
- 1 cup fine green beans, chopped
Dips
- 4 tbsp reduced fat natural yoghurt
- ¼ – ½ tsp Chinese five spice
Or
- 4 tbsp reduced fat natural yoghurt
- ½ cucumber (100g or 2/3 cup) chopped
- ½ tsp mint sauce
Method:
In a medium size bowl, mix together the onion, beans, parsley, and coriander, egg, tomato and flour.
Heat the oil in a medium-sized fry pan and place a large tablespoon of mixture into the pan. Depending on the size of the pan add another 2-3 spoons of mixture, spacing them well apart.
Cook for 2-3 minutes on each side until golden brown.
Serve the hot fritters with your choice of dips.
To make dips, blend all ingredients together until smooth.
