Vegetable congee
Warm vegetable congee for cold mornings.
Serves: 4

Cooking time: 60 mins
Ingredients:
- 1 cup brown or basmati rice, rinsed
- 7 cups salt reduced chicken or vegetable stock
- 5cm knob ginger, peeled and sliced thin
- 3 stalks celery, diced
- 2 cups broccoli florets
- 2 carrots, diced
- Spring onion, diced to garnish
Method:
- In a large pot, add stock, rice and ginger. Bring to the boil, then reduce to a simmer for 30 minutes. Stir occasionally so the rice doesn’t clump together.
- Add the celery, broccoli and carrots.
- Continue to simmer until the congee is thickened and creamy. The vegetables should be soft and tender.
- Garnish with spring onions and serve hot!
