Vegetable congee

Warm vegetable congee for cold mornings.

Ingredients: 

  • 1 cup brown or basmati rice, rinsed 
  • 7 cups salt reduced chicken or vegetable stock 
  • 5cm knob ginger, peeled and sliced thin 
  • 3 stalks celery, diced 
  • 2 cups broccoli florets 
  • 2 carrots, diced 
  • Spring onion, diced to garnish 

Method: 

  1. In a large pot, add stock, rice and ginger. Bring to the boil, then reduce to a simmer for 30 minutes. Stir occasionally so the rice doesn’t clump together. 
  2. Add the celery, broccoli and carrots. 
  3. Continue to simmer until the congee is thickened and creamy. The vegetables should be soft and tender. 
  4. Garnish with spring onions and serve hot!
