French toast with veggie topping

This tasty breakfast includes one serve of vegetables!

Serves: 2 

Prep time: 2 mins Cooking time: 7 mins 

Ingredients: 

  • 2-3 small mushrooms 

  • 2 large tomatoes cut into thick slices 

  • 2 slices multigrain bread 

  • 1 large egg 

  • 1/2 cup reduced fat milk 

  • Pepper – to taste 

Method: 

  1. Heat a non-stick fry pan and cook the mushrooms. Add slices of tomato and cook until just beginning to soften. Remove from the pan and keep warm. 

  2. Break the egg into a shallow dish and mix with the milk. Lay the bread into mixture, turn over and then lay carefully into the hot fry pan. 

  3. Cook for approximately 1 minute, then turn over and cook the other side. Serve the French toast topped with the mushrooms and tomato.
