Turkey burgers with tomato salsa

Quick and easy dinner in under 20 minutes!

Ingredients: 

  • 500g lean turkey mince or lean beef mince 
  • 1 onion, peeled and very finely chopped 
  • 1 large carrot, grated 
  • 1–2 cloves garlic, crushed 
  • 2 tbsp passata or crushed tomatoes 
  • 2 tbsp fresh coriander/parsley, chopped 
  • 1 heaped tbsp wholemeal flour 
  • 1 tbsp olive oil or vegetable oil 

Salsa 

  • 4 spring onions, finely chopped 
  • 2 medium-sized tomatoes, chopped 
  • 2 tbsp coriander/parsley, chopped 
  • Juice 1/2 lemon 
  • 1 green chilli, finely chopped (optional) 

Method: 

  1. To make the salsa: combine all the ingredients in a small bowl and cover. Leave to stand while cooking the burgers to allow the flavours to develop. 
  2. To make burgers: place onion, garlic, carrots, mince, passata and herbs in a large bowl and mix together – or place ingredients in a food processor and process briefly until combined. 
  3. Shape the mixture into 8 x 8cm rounds, 2cm deep. Coat each burger lightly in flour. 
  4. Heat the oil in a fry pan and cook burgers over medium heat for 3 minutes per side until golden brown and cooked through. 
  5. Serve the burgers with salsa and a watercress, spinach and rocket salad.
