Homemade chicken parmigiana

Delicious homemade chicken parmi dinner

Ingredients: 

Olive oil spray  

1 chicken breast (about 200g) (skin off)  

½ cup tomato passata (or tinned tomatoes)  

2 garlic cloves diced or 1 tbsp minced garlic  

1 red onion, finely chopped  

½ cup grated reduced fat cheese  

1 small bunch of continental parsley, finely chopped (optional) 

Method: 

  1. Preheat oven grill to 180ºC.  
  2. Cut chicken fillets in half to make 2 even chicken pieces about the size of your palm.  
  3. Cover chicken with plastic wrap and lightly pound with a mallet or rolling pin to flatten.  
  4. Mix chopped tomatoes, red onion and parsley in bowl.  
  5. Lightly spray pan with olive oil and cook chicken for 4-5 mins on each side or until golden. Transfer to a plate.  
  6. Add a layer of tomato mix and cover with cheese. Grill in oven for approximately 5 minutes or until cheese is melted and slightly browned.
