Easy peasy homemade muesli bars

Having a look around the supermarket it’s very difficult to find a muesli bar that does not have a large amount of added sugar and ingredients. That’s why these homemade muesli bars are a great quick, versatile, and healthy snack.

A lot of muesli bars available to purchase at the supermarkets can contain many types of added sugars (like sugar, glucose, syrups and honey). This recipe uses naturally occurring sugars that are found in the banana and dried fruit, which means there is no need to add any extra oils or syrups.  

The ingredients used are: 

Bananas: Best if they are ripe for ease of mashing and to act to bind the dry ingredients together. 

Oats: this makes up the base of the muesli used in the bars. It’s best to use whole rolled oats in this recipe for a rich and chewy texture and to keep us fuller for longer! 

Dried fruit: a combination or just your favourite can be added. Try adding apricots, dates, sultanas or raisins for some natural sweetness. 

Seeds: you can use any type of seeds you love in this recipe! Eg: pepita, sunflower and chia seeds. 

Cinnamon and vanilla extract: just a dash for flavour. 

Add in your favourite unsalted nuts like almonds or walnuts for some added healthy fats! 

 

Recipe:  

Ingredients:  

2 ripe bananas 

2 cups rolled oats 

1/3 cup dried fruit (apricots, dates, sultanas, raisins etc) 

1/3 cup seeds (pepita seeds, sunflower seeds, chia seeds etc) 

1 tsp cinnamon 

1 tsp vanilla extract

 

Method: 

  1. Preheat oven to 160 degrees 
  1. Place bananas in a bowl and mash 
  1. Add rolled oats, dried fruit, seeds, cinnamon and vanilla extract and mix until just combined. 
  1. Pour into a baking paper lined baking dish and press down with the back of a spatula or spoon until smooth. 
  1. Bake for 30 mins 
  1. Allow to cool before cutting into 8 bars. 
  1. Store in the fridge for up to 7 days. 

 

Tip: Make it a fun family activity! Get the kids involved in stirring the mixture and flattening the mixture in the pan with their hands!
